Well, I tried several time and always obtained the same result.
What I do is:
1) I create a gpx file with GPSbabel from embedded EXIF GPS data (I tried with 3 pics)
2)I open the gpx file with route converter and obtain 3 waypoints, what is, indeed, not enough to have the complete route. Then I add interpolate points (between the pictures) and at this very moment, new points are displayed but their date and time keep changing for a while, with crazy date like 1924 ! But this behavior is inconstant. Sometimes, all points are listed with the same date and time, but sometimes, dates are in the future!
And dates keep changing for a while after I run the Insert Points command.

I guess, you cannot prevent this. You could double click into the position list and change the date and times manually, but that's really annoying :-(

In fact, I found a pretty complicated way of doing what I want: I export my route in csv format, open it with excel, use excel's skill to batch all dates, convert it to gpx with GPSbabel and import in my tracks and routes application. And it does work, even if it's a lot of clicks ;-)
